What's in your kit
TRIO KIT
- Ingredients for three different truffles (Dark Chocolate Raspberry, Caramel Mocha, and White Chocolate Matcha) to include chocolate, flavor mix-ins, and toppings
- Measuring cup
- Parchment paper
Yield: 5-8 truffles per flavor
What you need to bring
- 1 medium plate (freezer safe)
- 4 small bowls (microwave safe)
- 3 spoons and 1 fork
- Access to a microwave (preferable) or stove, and a freezer
How to prepare your workspace
- While the ingredients in the kits are shelf-stable, we recommend placing kits in the fridge due to unpredictable weather conditions across the country.
-
To prepare your workspace, you'll want a flat surface with easy access to the stove or microwave and free of any electronics
- If you are using the stove, you will need to set up a double boiler which requires a small pot and a container to fit over top of the small pot. Your instructor will guide you on how to create this during the workshop, but here are some additional instructions:
- To make a double boiler, half-fill a pot with water and place it on the stove at low-medium heat. Cover a GLASS, METAL, OR CERAMIC container, which is larger than the rim of the pot, with aluminum foil and place on the top of the pot. Here is a video explanation. Remember to always use an oven mitt to touch the container when it is hot!

Other questions
Is there something I can use instead of the heavy cream?
During the workshop, your instructor will use heavy cream to mix with the melted chocolate to make your ganache. The ganache is then solidified in the freezer to a clay-like consistency so that it can be rolled out into truffles.
You are able to substitute the heavy cream with any non-dairy alternative. We would recommend either Oat Milk or Full Fat Coconut Milk as these have the thickest texture and will mimic the heavy cream the best (this is also what is most commonly used in professional pastry shops). Please keep in mind that non-dairy alternatives tend solidify slower in the freezer, so you may need to wait a little longer before you are able to roll out your truffles.
Where can I find the video call link?
In most cases, you can find the link to your video call in your calendar invite or in an email that your event organizer sent you. If you can't find it, contact your event organizer.
My kit hasn't arrived. What should I do?
It's rare, but sometimes mail gets lost or delayed due to unforeseen circumstances. If you gave us your email address when signing up, you would have received tracking information when it was dispatched so you can see your package's location and can contact the carrier directly. If you're still having no luck, let your event organizer know, and we'll do our best to get you a replacement kit asap.
Can you send me step-by-step instructions after the event?
If you'd like to receive written instructions for the experience so you can do it again, just ask the instructor. They can send out the instructions to your event organizer after the class ends!
